Chipotle BBQ sauce

Ingredients

  • 2 tablespoons of oil
  • 1 large onion 
  • 1/3 cup malt vinegar 
  • 1/2 cup apple cider vinegar 
  • 2/3 cup water
  •  2 cup ketchup 
  • 2 1/2 tbsp molasses 
  • 6 oz can of Chipotle in adobo 
  • 1/3 cup soy sauce 
  • 1/3 cup dark brown sugar
  • 2 tbsp honey 
  • 1 1/2 tbsp onion powder 
  • 2 tsp garlic powder 
  • 1 tsp black pepper

Cooking Instructions

  1. Add oil then add onions.   Cook the onions for about 10 minutes until they have some color and translucent.
  2. Add the rest of the ingredients and simmer for 25 minutes.   Stir about every 3 to 4 minutes to make sure it does not stick. 
  3. Let cool for about 10 minutes before straining through a strainer.  Note:  Save the solids for meatloaf or hotdog or smash burgers or anything that needs the flavor.
  4.  Let cool more before bottling and storing in the refrigerator.   It can keep in the refrigerator for months.
